Wine as it used to be made. Bottle-refermented, never filtered.

Kitestra is an "ancestrale": the oldest method for making sparkling wine. The wine finishes fermentation directly in the bottle, with its own yeasts. No filtration, no disgorgement. What you see in the glass — the amber color, the veil of yeast at the bottom — is the wine in its entirety, just as it was born.

Each bottle is hand-numbered. Ours comes from a production run counted in hundreds, not thousands.

Who makes it:

The Botrugno family has been making wine in Brindisi since 1900. The surname comes from the Greek "botrus": bunch of grapes. Thirty hectares of bush-trained vines, sandy soils near the sea. They grow indigenous Brindisi grape varieties — some nearly extinct — so that none of the local traditions are lost.

In the glass:

Amber, hazy color: this is a sign of being unfiltered, not a defect. Fine bubbles from natural refermentation. Before serving, the choice is yours: keep the bottle upright for a clearer glass, or gently turn it upside down to resuspend the yeasts and experience the full character of the wine.

How to drink it:

Serve chilled, at 8–10°C. Perfect for an aperitif, fried fish, raw seafood, fresh cheeses, or focaccia. It is a convivial wine: pop it open and share.

Why we chose it

The "ancestrale" is the method used before pressurized tanks existed. Botrugno still makes it this way, in bottles numbered one by one. Small producers, great stories.
