An Apulian grape variety. A rosé that doesn't hide.
The Susumaniello vineyards of I Pàstini are crossed from north to south by the local Valle d'Itria railway line. Hence the name: Le Rotaie (The Tracks).
The Carparelli family founded I Pàstini in 1996, in the lands between Locorotondo and Martina Franca, with one goal: to recover the ancient grape varieties of the Valle d'Itria. Susumaniello is one of these. It owes its name to the young plants, which become laden with clusters like a "little donkey," the tireless worker of the countryside.
How it’s made:
The grapes are harvested by hand in small crates and selected bunch by bunch. Soft pressing, very short maceration on the skins: 2 to 4 hours. That is enough for the color. The vineyards are treated only with organic products and fertilized with green manure from legumes. European organic certification.
In the glass:
Delicate pink. On the nose: floral notes of rose and fruity hints of strawberry. On the palate, it is fresh, savory, and has great mineral tension. Persistent.
How to drink it:
Serve at 10–12°C. It pairs with everything from appetizers to fish, and from fresh cheeses to white meats. With capocollo and taralli, it is right at home.

Why we chose it
We select small Apulian producers who work the way things used to be done. I Pàstini is not just any winery. It is a family that for thirty years has been planting native vines into the stones of the Valle d'Itria. Small producers, great stories.
