"Carciofi spaccati" (split artichokes) are artichokes that have been quartered and preserved in oil with white wine vinegar, parsley, garlic, and chili pepper. The oil used is sunflower oil, following the tradition for preserved vegetables: it is neutral and allows the artichoke to take center stage.

Serve at room temperature: as an appetizer, on a charcuterie board, or in a sandwich with capocollo and caciocavallo. In the summer, add them to a properly made rice salad.

  • Producer: La Cerignola di una volta — Cerignola (FG)
  • Net weight: 550 g
  • Ingredients: artichokes, sunflower oil, white wine vinegar, salt, parsley, garlic, chili pepper, acidifier E330, antioxidant E300
  • Storage: cool, dry place; after opening, store in the refrigerator and keep covered with oil

What does "spaccati" mean? — Cut into wedges, not left whole: the traditional homemade cut, which allows the marinade to penetrate between the leaves.

Who produces them? — The Iaculli family in the province of Foggia, right next to their family oil mill which has been active for over 50 years.

How long do they last after opening? — In the refrigerator, kept covered in oil, they should be consumed within a few days.
